Grill Baked Potatoes

Description If you’re already barbecuing, why run in and out of the house tending to all the side dishes. You can bake your potatoes right on the grill. Make sure to break out the sour cream, chives and real bacon bits or any of your favourite toppings.

  • 6 baking potatoes
  • Salt and pepper to taste
  • A selection of toppings

You will need aluminum foil to wrap the potatoes, a fork to poke holes in your potatoes and barbecue tongs to rotate and remove potatoes from the grill.

1) Prepare potatoes Rinse the potatoes in water to clean off dirt. Poke the potatoes with a fork a few times to release pressure that may build up during cooking.

2) Heat BBQ and put potatoes on the grillWrap the potatoes tightly in foil. Preheat the barbecue to 350° F or so. Allow it to heat up for about 15 minutes to get a well-established heat.
Place the potatoes on the grill, away from the flame. Allow them to cook for up to 90 minutes, until they are soft to the touch. Flip the potatoes about half way through the cooking time.
Additional Tips
Once cooked, unwrap your potatoes, slice them and add your favourite toppings.


Beer Can Grilled Chicken

Description This is a surprisingly simple way to make an amazing barbecue whole chicken on the grill. With this recipe, you don’t need any special equipment, just a beer can and it makes incredibly moist chicken you’ll remember for a long time.

  • Whole roasting chicken
  • 2 Tbs olive oil
  • Your favourite chicken rub
  • 1 can beer

Also, keep on hand a large bowl, small glass, meat thermometer, serving fork and barbecue spatula.

1) Apply rub and heat the barbecue Prepare your rinsed and dried chicken by rubbing olive oil all over. Then proceed to apply rub all over as well. Pre-heat the barbecue to 350–400° F for about 15 minutes.

2) Prepare the chicken for the grillPour out about 1/4 of the beer before placing it in the chicken. Open up the rear of the chicken to prepare it for beer can insertion. Place the beer can in your bowl and gently push the chicken over top.

3) Insert thermometerPlace the chicken on the grill. Insert the thermometer deeply into the breast, but take care not to touch any bone.

4) Cook Depending on the size of your chicken and the heat of your barbecue, cooking time will vary.  You can expect to cook the chicken for about 1 1/2 hours, but the best way to ensure you have a fully cooked chicken is by using a meat thermometer.
Cook until chicken reaches 185° F internal temperature.

5) Get ready to serve When the internal termperature has been reached, remove the chicken from the grill. You can place a barbecue spatula underneath the can and a serving fork into the chicken to remove it.
Let stand for 10 minutes before carving. Carve and enjoy this incredibly moist chicken.



Crab Stuffed Tomatoes

Description Make this recipe with cherry or very small tomatoes, and you will have an excellent finger food for a party. Use freshly cooked crab or canned crab meat.

  • 4 tomatoes, washed
  • 1½ tsp salt
  • 2 cups flaked crab meat
  • 1 pinch cayenne pepper
  • 1/2 tsp dry mustard
  • 1 Tbs olive oil
  • 2 tsp finely chopped parsley
  • 1 hard boiled egg, sieved
  • 3 Tbs vinegar
  • Top Dressing
  • 3/4 cup mayonnaise
  • 1 tsp finely chopped capers
  • 1 tsp finely chopped olives
Methods/steps
  1. Cut out the top of the tomatoes and hard center. Sprinkle with sal - distirbute about 1 tsp among all tomatoes.
  2. In a bowl, mix crab meat, 1 tsp salt, cayenne pepper, mustard, olive oil, parsley, egg and vinegar. Toss as you would with a salad.
  3. Stuff the tomatoes with the crab mixture, stnad them in serving tray and chill.
  4. Mix the mayonnaise with the chopped capers and olives. Top the tomatoes with this mixture and serve.
